At Mint ’N More Foundation, we believe that nourishing people begins with nourishing the land and strengthening the local food system. Our team brings together complementary expertise in community nutrition, regenerative agriculture, and local food system development.
Each team member contributes a unique perspective—whether it’s teaching nutrient-dense cooking, supporting new growers, or expanding access to fresh, chemical-free food. Together, we’re working toward one shared mission:

Megan McKay
Executive Director
Megan McKay is the Executive Director of Mint ’N More Foundation and organizer behind our mission to cultivate health through nourishing agriculture. She’s passionate about helping people reconnect with where their food comes from, supporting local farmers, and making healthy, whole foods joyful and approachable.
When she’s not leading big-picture strategy, you’ll most likely find her gardening, cooking Mediterranean-inspired meals, practicing yoga, or dreaming up the next big thing with a coffee on her deck.

Sosia Duffy
Local Food & Agriculture Outreach Manager
Sosia “Sosh” Duffy is our Local Food & Community Agriculture Manager, leading the Community Garden and local market education efforts. She’s passionate about helping people learn how food is grown and showing how nourishing the land nourishes our bodies and communities, too.
She grows vegetables and herbs in a high tunnel, sells at local markets, loves fresh tomatoes, makes a killer bruschetta, and believes we learn best by doing.
You’ll most likely find her with coffee in hand, basil nearby, and dirt under her nails. We’re so excited to have Sosh growing this work with us.

Kelsy Willardson
Community Health Outreach Manager
Kelsey Willardson is our Community Health Outreach Manager and a lifelong Knoxville local who’s passionate about helping people connect through food. With a background in public health and food & agriculture law, Kelsey brings both expertise and heart to her work — leading classes, creating community programs, and inspiring others to grow, cook, and share nourishing meals.
You’ll likely find her with dirt under her nails, a cup of tea nearby, and something delicious simmering in the kitchen.

About Mint 'N More Foundation
Cultivating Health by Nourishing Agriculture
Several years ago Iowa native, Mikol Sesker, purchased 20 acres of farmland in Marion County, Iowa with a family dream to operate a sustainable organic farm following the principles of permaculture. The property includes a historic home that was moved from Central College in Pella and is undergoing renovation.
Mikol partnered with her siblings, Nathan Sesker and Megan Sesker Enriquez, to work on Mint ‘N More, the micro-scale family farm strategically named to represent the initials of the three siblings. They got to work creating buffer zones and planting beds before Nathan’s untimely death from cancer in May 2017. In the fall of 2024, Mikol hired Megan McKay, a native Knoxville entrepreneur, to help define the vision and purpose of the organization and start putting ideas into action.
Mint 'N More Foundation was formed in 2025 with a refined vision of Cultivating Health by Nourishing Agriculture. Today the MNM Foundation is focused on three main pillars to reach the goal of a healthier community that prioritizes soil health:

Community Gardens and Gardening education-by offering space for the community to garden together and learn gardening skills, we bring people closer to their food sources, foster appreciation for what it takes to grow food and foster excitement about local foods.

Food and Nutrition Education-Through cooking classes, hands on demonstrations and our newsletters we teach the community about nutrient dense, whole foods and giving the the skills to prepare food in their home. We are actively researching new ways we can make an impact in our community through a community health survey to give us insight into future planning.

Connecting local farmers to eaters-If we want more local farmers producing table food with a focus on soil health, we need to make sure there is a strong connection to eaters through local markets. In that vein we started Gathered Local Foods Market to provide a convenient way for farmers and eaters to connect and take the friction out of buying local. We also support farmers and home food producers with education, partner resources and business guidance so they can be successful!
